Substances
- 1 can (400 ml) of diced tomatoes

- Salt and pepper
- Greens to serve
Methodology
- Preheat oven to 400°F (200°C)
- In an oven-proof dish of any dimension, empty tinned tomatoes. Add in tomato paste, garlic, rosemary and three tsp of the Italian herbs. Combine collectively within the oven-proof dish.
- Place hen thighs on prime of the tomato combination, adopted by cherry tomatoes, olives and cubed potato, if utilizing.
- Drizzle with olive oil and squeeze over the juice of half a lemon.
